Tillamook
Pronunciation: [TIHL-uh-mook]
A yellow cheddar produced in and around Tillamook, Oregon. It is made from raw milk and ranges in flavor from mild to sharp. Aged Tillamook is highly prized but seldom seen anywhere but the West Coast. See also cheese.
