stovetop smoker

Clever cookware that allows food to be smoked indoors without setting off the smoke alarm. This low-fat style of cooking delivers succulent, smoky food even on rainy days. The stovetop smoker is 15 X 11 X 3½ inches, made of heavy-gauge stainless steel and features storage-friendly retractable handles, drip tray, rack and slide-on cover. Included with the set are several types of finely cut wood chips, ranging in flavor from mesquite to hickory. A spoonful of the wood chips is placed in the center of the pan, topped by the drip tray and rack, on which the food is placed. The cover slides on and the pan is placed over high heat. As soon as a puff of smoke sneaks out between pan and cover, the heat is reduced and the food cooks according to the manufacturer's instructions. This cooking method delivers smoky flavors to everything from meat to fish to tofu to vegetables—corn on the cob is never better. The stovetop smoker can accommodate whole chickens and hams simply by tightly tenting the pan with heavy-duty foil.
