Shaoxing wine

A Chinese rice wine that takes its name from an area in northern China. Premium Shaoxing wine, which can be aged for many years, is highly regarded as a potable while lesser grades are typically used for cooking. Shaoxing wine is frequently called for in recipes because of its good quality. However, note that bottles labeled "Shaoxing Cooking Wine" have added salt (see cooking wine). Shaoxing wine is available in Asian markets and in some supermarkets. Dry sherry is considered a good substitute. Also called Shaoshing wine, Shao hsing wine, Chinese rice wine and yellow wine.
