Pronunciation: [LEE-duhr-krahntz]

This American cheese was created in 1882 by Emil Frey, a New York cheesemaker. He named it after a New York singing society of the same name, whose members were great fans of the cheese. This cow's-milk cheese was patterned after limburger, and its semisoft ivory interior, mildly pungent flavor and distinctive aroma made it a popular favorite. Unfortunately this cheese is no longer being produced, though Marin French Cheese Company produces a similar cheese they call scloss. See also cheese.
