grill pan

A heavy-weight pan that can range in shape from round to square to rectangular. The common denominators of all grill pans are that they have shallow sides and a ridged cooking surface. The low sides allow for ease in lifting and turning food; the ridges allow fat to drain off and also provide the grill marks many find so appealing. Today most grill pans have non-stick surfaces, making cleanup a snap.
