Girolle

Pronunciation: [zhee-ROHL]

1. Invented in the 1980s by Swiss precision engineer Nicolas Crevoisier, a girolle is a cutting instrument specifically designed to shave thin slices of tête de moine cheese. This tool is a downward-facing blade and handle mounted on a stainless steel rod. The rod is inserted into the center of the cheese and the handle turned, which slowly lowers the blade, thereby shaving the cheese into rosettes. 2. The French name for chanterelle.
