This sensuously rich triple-cream cheese is made from cow's milk and contains 75 percent fat. It comes in chunky cylinders with white rinds. When ripe, the ivory interior has a sweet, buttery, slightly piquant flavor. Explorateur is ripened for 2 to 3 weeks and only pasteurized-milk versions can be imported into the United States.
