Roasted, husked cocoa beans broken into bits, cocoa nibs are used to add texture and a subtle chocolate flavor to baked goods like cakes and cookies, as well as to some savory dishes. These little chunks can be substituted for nuts or chocolate chips for crunch without sweetness.
