blini

Pronunciation: [BLEE-nee]

Hailing from Russia, blini (singular, blin) are small, yeast-raised pancakes that are classically served with sour cream and caviar or smoked salmon. Blini are traditionally made with buckwheat flour, although lighter versions combine buckwheat and wheat flours.
